Easy Chicken and Potatoes

Okay kids! Here is your chance to play with your food! The cool thing with this recipe is there isn’t an official recipe…what??? It is time to CREATE!

SUPER EASY CHICKEN AND POTATOES

Get whatever kind of chicken you would like–bone-in makes your meat moister. I used thighs but you can use wings, drumsticks, or breasts.

I browned mine first but you can totally skip this step and chuck them right in the slow cooker. Grease the slow cooker first for easier clean-up.

Arrange chicken in the slow cooker and sprinkle with whatever seasonings you like. I used Montreal Chicken seasoning but use whatever you have and like. You can add the potatoes now if you want or later like I did. Either way is fine. Put the lid on and cook on low.

Cook the chicken on low for 4-6 hours or until chicken is tender and then add potatoes if you didn’t already.

Cook for an hour or two more or until potatoes are tender. You can add the potatoes at the first and it is perfectly fine.

I sprinkled with fresh parmesan to make it look pretty but however you want is great!

Throw chicken and potatoes in the slow cooker in the morning and dinner is ready that night. Easy, peasy, and yum, yum, yummy! What other flavors will you create?

Slow Cooker Apple Cobbler

Cold days, warm cobbler–doesn’t get much better! This recipe is so yummy and easy. Great comfort food!

Slow Cooker Apple Cobbler

Apple mixture:

7-8 Apples, peeled, cored, and cut into slices (I used Granny Smith but you can use whatever)

½ cup packed brown sugar

3 Tablespoons sugar

1 ½ teaspoons cinnamon

¼ teaspoon nutmeg

¼ tsp. salt

Topping:

1 cup old-fashioned oats

¾ cup whole wheat flour

¼ cup packed brown sugar

1 teaspoon cinnamon

¼ teaspoon salt

1 cube butter, cut into cubes

Place the apple mixture in a slow cooker sprayed with non-stick spray. Stir together with rubber spatula and let sit while you prepare the topping.

Combine topping ingredients and mix the butter in with your hands (make sure you wash your hands really well first!!!)  until the mixture clumps together. Stir the apples again and spread the topping over the top.

Cook on high for 2 hours or on low for 3 ½ hours. Turn off heat and let stand for 30 minutes to an hour before serving. Serve with ice cream if desired.

White Chicken (or Turkey) Chili!!!

Use that leftover turkey in this chili and you will be wishing you had more to use up!

WHITE CHICKEN CHILI

 2 pounds boneless, skinless, chicken OR leftover turkey

3 cans white beans, drained

1 can corn or 2 cups frozen corn

1 envelope or tablespoon taco seasoning mix

1 can chopped green chilies

1 can cream of chicken soup

1 can chicken broth or 2 teaspoons chicken bouillon and 2 cups water

½ cup half and half or milk

1 can green enchilada sauce (optional)

Toppings (optional):

Sour cream

Shredded cheese

Sliced green onions

Tortilla strips or crunched up chips

Sliced avocado

Place chicken (or turkey) in slow cooker. It can be raw or cooked. I cut mine up because I like chunky but you can cook it and shred it at the end if you prefer. Top with beans, corn, and green chilies. In a separate bowl, mix together soup, taco seasoning, and broth. Pour over ingredients in the crockpot. Cover and cook on low for at 6 to 8 hours if you used raw chicken. If your meat is already cooked, 3 to 4 hours should do the trick. Top with whatever topping you like!

Old Fashioned Rice Pudding

Love this comfort food! Be creative and top with fruit, nuts, whipped cream…

OLD FASHIONED RICE PUDDING

¾ cup rice (I used brown rice) but whatever works.

3 cups milk

¾ cup sugar

1 teaspoon cinnamon

¼ teaspoon nutmeg (optional)

1/8 teaspoon salt

¼ cup butter, melted

½ teaspoon vanilla

Lightly grease slow cooker. Add all of the ingredients. Stir to combine. Cook on low for 3-4 hours or until rice has absorbed the liquid. Top with raisins, whipped cream, or whatever else you like!

Taco Soup

Taco soup that’s so easy, it’s like magic!

You know you want to make some right now!

TACO SOUP

1 lb. ground beef

1 large onion, chopped

1 (16 oz.) can kidney beans

1 (16 oz.) can chili beans

1 (16 oz.) can corn

1 (16 oz.) can black beans

1 (16 oz.) can Mexican-style tomatoes (I don’t like chunky tomatoes so I blend mine up)

1 (8 oz.) can Mexican tomato sauce (or regular)

1 package or 1 Tablespoon Taco seasoning mix

1 package or 1 Tablespoon ranch dressing mix

Brown meat and onions in a pan, drain off any fat, and put in slow cooker. Dump in the rest of the ingredients—do not drain. Cook on low for 3-4 hours or on high for 2-3 hours. You can add water if you don’t like it as thick. Top with shredded cheese, sour cream, tortilla chips, and green onions as desired.

Slow Cooker Mashed Potatoes

SLOW COOKER MASHED POTATOES

3 lbs. potatoes (I used a mix of red and russets but either is fine.)

4 teaspoons minced garlic OR 2 teaspoons garlic powder

1 ½ cups milk

4 Tablespoons unsalted butter

Salt and Pepper to taste

Any other seasonings

Spray a 5 quart (or larger) slow cooker with non-stick spray. Cut potatoes in chunks—I don’t peel mine but you can if you don’t like the peelings. Place potatoes in slow cooker and add ¾ cup of milk, garlic, and butter. Cook on low for 4-6 hours or until potatoes are soft. Mash with potato masher or electric mixer and add remaining milk as needed. Add salt and pepper as desired.

*If you want to cook potatoes on high for a shorter amount of time, replace the ¾ cup milk with ¾ cup chicken stock at the beginning.

Sour cream, half-and-half, or evaporated milk can be used in place of half of the milk also.

**I added French fry seasoning to mine instead of the salt!

Apple Spice Pancakes

Apples, apples, apples! Let’s get creative–this is a great fall recipe (although I love it any time of year…)

APPLE SPICE PANCAKES

1 ½ cups complete pancake mix (just add water kind)—I used whole wheat but any kind is fine.

1 cup water

1 apple, peeled and grated

½ cup applesauce

1 teaspoon cinnamon

½ tsp. vanilla

In a medium bowl, stir all ingredients until combined. Pour batter into pancakes  on a hot griddle that has been sprayed with non-stick spray or lightly greased. Cook until browned on both sides. Serve with butter sauce, syrup, or any favorite toppings.

Banana Bread Pancakes

Sooo easy and sooo yummy! No other words are needed.

BANANA BREAD PANCAKES

Make pancake mix as directed on package. The mix in the picture called for:

2 cups pancake mix

2 cups milk

2 eggs

4 Tablespoons oil (Since I used a banana, I took out the oil but either way is fine).

1 overripe banana, mashed

Chopped nuts (optional)

Mix all ingredients together. Pour onto hot greased griddle. Turn pancakes over when bubbly. Serve with butter sauce or syrup.

If you have a complete (just add water) pancake mix, just mash a banana and add to it. How easy is that?

Carrot Cake Pancakes

Oh my, it’s CARROT CAKE PANCAKES! What??? Can you taste the yum factor already?

CARROT CAKE PANCAKES

2 ½ c. complete whole wheat pancake mix

1 ½ c. water

½ tsp. cinnamon

¼ tsp. ginger

¼ tsp. nutmeg

1 tsp. vanilla

3 Tbsp. butter, melted

2 medium carrots or 1 cup baby carrots, grated

Random pear (optional)

In a bowl, combine all dry ingredients. Add wet ingredients and stir until combined. It is okay if it is a little lumpy.

Turn a griddle on to medium high heat. Spray with nonstick spray. Pour batter onto to griddle and cook until brown on both sides. Top with butter sauce or syrup.

Let’s start the fun with breakfast, which means lots of great pancake ideas!

Soooo, let’s start our adventure by creating fun, easy, and delicious pancakes! My first favorite is Pumpkin Pie Pancakes with Butter Sauce. Butter sauce just makes me happy and we use it more than syrup. You are gonna love this one!

PUMPKIN PIE PANCAKES

2 c. buttermilk or whole wheat pancake mix

1/2 c. cooked pumpkin

1 ½ tsp. pumpkin pie spice

2 tbsp. brown sugar

1 ½  c. cold water

Mix all together. Cook on greased griddle until browned on both sides. Makes 16 cakes.

And now for the butter sauce…

Butter Sauce:
1 c. sugar
1 cube butter
1/2 c. milk
1 tsp. vanilla
Mix all ingredients together. Melt together until hot but do not boil. Can melt in microwave or use a pan on the stove over low temperature. Use on waffles, pancakes or whatever else.

Microwave for one minute and stir. Microwave a minute more and stir. Continue until it is hot and melted into deliciousness.
