That was a “Waffle” lot of fun!

My daughter loves french toast. It is one of her favorite foods. The first thing she does when it comes off the griddle is smash in the middle so the syrup has somewhere to go. I solved that problem for her–I waffled french toast :)! Now there are plenty of little pockets for syrup or butter sauce or fruit or whatever. Try it out–it is great! Here we go:

Waffled French Toast–looks yummy, doesn’t it?
Get your ingredients: Eggs, milk, bread, and I like a little vanilla and cinnamon.
I used 3 eggs, a generous splash of milk, a good sprinkle of cinnamon and about 1/2 teaspoon vanilla and scrambled it all up with a fork.
Give the bread a good dunk and coat both sides with egg mixture.
Cook on a preheated waffle iron. Spray with non stick spray right before you plop the bread on there. I cook it on the lowest setting.
Look at those pockets waiting to be filled…
Top with fruit for a change. This french toast was topped several different ways. Maybe it has multiple personalities 🙂 I love to use butter sauce (from my first blog post) with fruit. Try it out!

Why Not Waffle It?

So in thinking of what to make, I thought, “why not try waffling corn bread?” That way there are more holes to hold the honey butter! Or make it into a Navajo taco…Hmmmm, interesting. And so I tried it and guess what? It worked great! (Even if the pictures are a little creepy…:) So here goes…

Take your favorite cornbread mix and follow directions on the package…
Mix together to make batter…
Pour onto a greased, preheated waffle iron. I added the blueberries trying to bake a face in it but it didn’t really work. However, the cornbread baked great in the waffle iron.
So I made a face on the cornbread after I waffled it. Didn’t last very long–delicious! What else could you waffle?


Wait, Waffle What???

This. is. awesome. I made WAFFLED GRILLED CHEESE and it was soooo easy. Cooked in 2 minutes and 39 seconds. Talk about fast food!

Get your bread and cheese and you could add other meats or cheese or even veggies, but I just used bread and cheese.
Very lightly butter one side of each slice of bread…
Place on waffle iron with the buttered sides on the outside…
Cook on medium heat for 2 minutes and 39 seconds…
And then you can make a lego looking grilled cheese house before you eat it 🙂
Lunch is ready!

Waffle Amazing!

Did you know that you can make quesadillas in a waffle iron? It is easy peasy and very yummy. I made pepperoni pizza quesadillas with dipping sauce but you can make any kind. Think of the possibilities–you could even make dessert quesadillas!

Long list of ingredients: Tortillas, cheese, pepperoni
I like to use slicde cheese since it is easier to contain…
Flop on greased, hot waffle iron. I use the the smaller tortillas and they fit my waffle iron perfectly…
Close the lid (you don’t need to squish it hard) and let cook for 1-2 minutes until golden brown and cheese is melted.
Serve with favorite sauce if desired. Whoa, that was easy and super, duper yummy!

There is no printable recipe since it would be embarrassing to print a recipe this easy, just sayin’…:)

Waffle Magic!


Oh. my. goodness. I think I found a new best friend in my waffle iron! So today I made Waffle Iron Hash Browns. Changed my life. This is THE ONLY WAY to make hash browns!


1 large or 2 medium russet potatoes

2 eggs

½ cup diced ham

½ cup grated cheese

2 teaspons dried onions

½ teaspoon garlic powder

½ teaspoon salt

½ teaspoon pepper

Mix all ingredients together in a bowl. Spread half of mixture on well greased waffle iron. Cook for 4-5 minutes until golden brown. Repeat cooking with other half of mixture.


Gather the can add more players like: spinach, bacon, onions, peppers, mushrooms, etc.
Put all of the players in a pretty big bowl…
Mix ’em all up…
Game on! (Cook them until golden)
Score! Pile of deliciousness right here, fans. Life changing game, I’m tellin’ ya!

Waffle Love!

Happy Valentines Day! Since today we are celebrating love, I thought I would put together two things I love–pizza and waffles! What???? There are so many fun things you can create with a waffle iron so I thought I would start with this one.  MMMMM…yum!


Pepperoni Pizza Waffles


¾ cup warm water

1 ½ teaspoons yeast

1 teaspoon sugar

1 ¾ cup flour

2 tablespoons olive oil

1 teaspoon salt

Optional add ins:

2 teaspoons basil

1 teaspoon garlic powder

1 teaspoon oregano

½ teaspoon black pepper

or your favorite pizza crust

Pizza or pasta sauce


Mozzarella Cheese

In a large bowl, sprinkle sugar and yeast. Add the warm water. Let sit for 5 minutes or so. Add the salt, olive oil, and flour and add ins if you want a seasoned crust. Mix until it makes a sticky dough. Dump dough onto a floured surface and knead, adding a little flour at a time, until no longer sticky. Put back in the bowl, cover with a cloth, and put in a warm place to rise. Let it rise for about 30 minutes.

When the dough is ready, divide into 6-8 ball depending on the size of your waffle iron. Stretch into discs just smaller than the waffle iron. Sprinkle a plate with a little bit of flour, place one dough disc on plate. Leaving about an inch around the edges clean, add a small amount of sauce, pepperoni, and cheese. I use sliced cheese since it is easier to stay where I want it to. Cover with another dough disc.

Heat waffle iron and generously spray with non stick spray when ready. Place pizza in waffle iron and cook until browned. Dip in remaining sauce if desired.

Use whatever ingredients you like…
Flour the plate so the dough doesn’t stick, stretch the dough so it is just smaller than your waffle iron…
Cover with another dough disc and pinch the edges together…
Sprinkle a little flour on top and make sure your waffle iron is well greased…
A little bit of sauce and cheese will ooze out during cooking but that’s okay…

Pumpkin Cookies

Do you ever have a cookie emergency? And you need a cookie  right then but you don’t have any cookies! Well all you need is pumpkin and a cake mix and you have fresh, warm, cookies in minutes.vol_2052

Pumpkin Cookies

1 spice cake mix

1 15 oz. can pumpkin

Chocolate chips (optional)

Spray cookie sheet with non-stick spray. Preheat oven to 350 degrees. Dump cake mix and pumpkin in a mixing bowl and beat together. Stir in chocolate chips. Drop on greased cookie sheet and bake for 12-15 minutes.

I know it is hard to imagine making cookies with only 3 ingredients…
Dump the pumpkin and cake mix in a bowl…
Beat together and stir in chocolate chips…
Bake at 350 for 12 to 15 minutes and you have delicious pumpkin cookies! Oh man, am I good or what????

Energy Up!

One of the best ways to start your day is eating oatmeal. You don’t have to buy those expensive little packets. Make your own–it is better for you, cheaper and tastes better :). It is so easy, you will wonder why you didn’t think of it before now…vol_1958

There are so many things you can do with oatmeal! I am going to share a few ideas. We will start with the basics:

All you need is oats, sugar (I like brown sugar), salt, and water. And cinnamon because cinnamon makes everything better.
Put 1/4 cup oats ( I prefer old-fashioned but quick cooking is fine too) in a microwave safe bowl. Even though this bowl looks pretty big for oatmeal, you will want a good sized cereal bowl so it doesn’t boil over in the microwave.
Add 1 Tablespoon of brown sugar, a good sprinkle of salt, a sprinkle of cinnamon, and 1/2 cup water. Microwave for 2 minutes.
Add some milk if you like and you have a great start to your day!

I also made some other oatmeal creations just for fun.Here are some of the options I used:

What else could you add?
Basic oatmeal recipe and add 1/2 cup frozen blueberries and 1 teaspoon flaxseed.
Add 1/2 cup water to this…
Microwave for 2 minutes…
My favorite–blueberry oatmeal. Yummy, Yummy!

Next is pumpkin pie oatmeal. Is that legal? I am turning oatmeal into a dessert flavor. Oh yes!

Basic oatmeal recipe, 1 heaping Tablespoon pumpkin, a sprinkle of pumpkin pie spice (if you have it, if not it is fine), sprinkle of pecans, and 1/2 cup milk (or you can just use the water but milk makes it a little creamier…
Microwave for 2 minutes after adding the milk. Milk will boil over VERY easy so you have to watch this one closely. I hate having to clean the microwave…
Pumpkin Pie Oatmeal. How did that whipped cream get on there??? I guess I will have to make it legal too.

And for the finale….Apple Spice Oatmeal.

Basic oatmeal, 2 Tablespoons of applesauce
Add 1/2 cup water and microwave for 2 minutes. Way too easy!
Bring it on and energy up with Apple Spice Oatmeal! Wasn’t that easy???

For an even quicker morning or while you are traveling, you can put the basic oatmeal recipe in a ziploc bag. When you want to use it, dump it in a bowl, add whatever else you would like and 1/2 cup water, microwave for 2 minutes and you are good to go. What other flavors could you create?

Play With Your Food!

I know that you have been told not to play with your food, but…this time I want you to. So today we are making QUESADILLA BUTTERFLIES –not to be confused with butterfly quesadillas. They are NOT the same thing! Think about it…:)

You have to make your own creation and ANYTHING goes! This is what I did but there is so much more you can do with this.

Grabbed some stuff from the fridge…
I made 4 kinds: Salsa & Cheese, Ham & Cheese, Pepperoni Pizza, PB & J (and a little chocolate)
I like mine crispy so I cooked them in a little bit of butter but you can just as easily microwave them.
Nice and golden. I used the smallest tortillas since I am home alone and I knew I would want to eat all of them. These tortillas are the street taco size, but do whatever size you have.


Cut them in half and cut some veggie slivers for the bodies and you have Quesadilla Butterflies.

They were yummy! Just so you know, no real butterflies were harmed in the making of this blog. 🙂
