Recipe of the Week: Chicken and Veggie Tostada

This delicious chicken and veggie tostada recipe is a great twist on a classic Mexican tostada! Full of carbohydrates, micronutrients, protein and fiber, this recipe has a great combination of health benefits that helps us be active and healthy.

What is a Tostada?

If you don’t know what a tostada is let me tell you, they’re delicious!

The tostada is a traditional Mexican dish that is inexpensive and easy to make. Usually tostadas feature a crisp corn tortilla topped with seasoned meat and a variety of vegetables including onion and lettuce. Queso fresco, cilantro and tomatoes are tasty additions to tostadas.

Tostadas are great for making in large batches if you have a big family to feed. This recipe can easily be multiped to accommodate large groups of people.

Save Money and Time

To save time and money on making this healthy tostada recipe I used a combination of canned and fresh produce.

Canned vegetables can cut down on time spent on food preparation and clean up afterwards. Often canned vegetables can be less expensive than fresh produce that is out of season.

Tomato is one of the vegetables in this recipe that is in season! Tomatoes like to ripen in the heat of Summer, which means now is a great time to experiment with recipes that include tomato.

Staying Active

When you eat these delicious tostadas you may not be thinking about how this meal will help you be active, but it does!

  • Protein – The protein found in the chicken and beans in this recipe helps maintain and rebuild our muscles
  • Carbohydrates – The carbohydrates found in the tortillas and vegetables in this recipe gives our bodies the energy they need to be able to exercise
  • Vitamins/Minerals – The vitamins and minerals found in the tomatoes, onion, beans and corn help our bodies fend off sickness and function properly, which allows us to be active without sickness
