Rainbow in a Bowl!

Eating the rainbow is a fun way to try new things and make your food beautiful before you eat it! Have you ever noticed at the store or market that there are a lot of different colors in the produce section? You can get a little bit of each color into your bowl and fill up all the sections on MyPlate!

This is a fun way to enjoy and share all the goodies from your garden or the farmer’s market (Don’t forget Double Up Food Bucks are still going at markets around the state through the end of market season! –With Double Up Food Bucks you can get up to $30 of FREE Utah-grown fruits and veggies – per market day – when using your SNAP EBT Horizon card at participating farmers markets, mobile markets and farm stands.)

Just make a batch of brown rice, quinoa, or couscous, and top it with a rainbow of veggies like tomatoes, cucumbers, carrots, avocado, and then add protein like tasty garbanzo beans, or grilled chicken. You can boost grain bowl flavors with fresh herbs, simple sauces, and even pickles!

Try this recipe out with your family while summer still has a lot of local food to offer!

This recipe looks like a long one because it has lots of things in it, but its a lot of chopping and tasting! You’ll need a few tools, so be sure to read the recipe before you start. As always, you can swap any veggies for any other veggies to make it your own!
