Recipe of the week: Black Bean Tacos

We stayed home and made up dinner from random stuff we had in our cupboard, and you can too!

Cooking without a recipe can be a little bit scary, so its easiest to start with something you know and change it just a little bit. Since the kids at my house like to eat tacos, we made tacos! We used black beans, taco seasoning, frozen corn, part of an onion, and a few tortillas. If you have anything else in your fridge that would be good in a taco, add it! There are no rules!

I have a taco seasoning blend recipe, but I don’t have a taco recipe. I will share what we did, and I would love to see what you do for your “random-stuff-from-the-kitchen” tacos. The kids peeled the onion and let me cut and cook it. Then we put half of a can of black beans in the food processor. After that we mixed up the cooked onions, some frozen corn, taco seasoning, and salt and pepper in a big bowl.

We rolled up our black bean tacos and baked them at 350 for about 15 minutes, until the insides were hot. The girls rolled cheese up in theirs, and we served them with salsa and salad.

Dinner doesn’t have to be fancy, or complicated to be delicious! Look through your cupboards and see what kind of tacos you can make!

  1. We made these black bean tacos for dinner and they were delish! I added salsa and a jalapeño to the bean mixture and it was tasty! We also put it in the broiler for a minute to make it crispy and topped it with plain greek yogurt! Yum! Thanks for the great dinner idea! 🙂
