Healthy Halloween // Jack O’ Lantern Stuffed Peppers

Today is the day! Happy Halloween, everyone! Before you go trick-or-treating, you’ll need a good dinner. Eating a healthy, balanced meal for dinner will give you the energy you need for the rest of the night! Filling up on foods from the 5 main food groups will also help you eat less sweets. These Jack O’ Lantern Stuffed Peppers are the perfect start to a healthy Halloween night.

We’ll need 2 bell peppers (can be any color), beans, rice, cilantro, lime, salsa, and sour cream/plain Greek yogurt.

First, chop your cilantro and prepare your peppers. To make a Jack O’ Lantern pepper, slice the top off of the pepper. Remove the seeds. Using a sharp knife (ask for help if you need it!), cut small triangles for eyes and create a toothy grin for each pepper.

Next, combine all other ingredients in a medium-sized bowl. Mix well, making sure the sauce covers all of the beans and rice.

Stuff each Jack O’ Lantern with the beans and rice mixture and place on a baking sheet. Bake in a preheated oven (35 degrees F) for 15 minutes.
