Who loves cheese crisps?! Some of you may also know this delicious food by its other name – cheese quesadilla. Whether you crisp or quesadilla, jazzing up this classic lunch with a sliced tomato is something you won’t regret!

Grab some whole-wheat tortillas, part-skim cheese, and fresh tomatoes.

Next, slice or dice tomatoes as desired.

Lay one tortilla flat on your plate/countertop. Scatter sliced tomatoes on top of the tortilla. Sprinkle cheese on top of tomatoes. Place another tortilla on top of the tomatoes and cheese.

Once you have assembled your cheesy tomato crisp, microwave on high until the cheese is melted (about 45-60 seconds).

Slice the crisp in small wedges for easy eating.
