It is pumpkin carving season! Have you carved a pumpkin yet this year? Pumpkins are a fun halloween decoration and an excellent source of nutrition!
When carving a pumpkin, make sure you save all those slimy seeds! Pumpkin seeds are a great source of protein and fiber. They might not look very good when you first pull them out of the pumpkin but after a little wash and some seasonings, you got a tasty snack!
Follow the directions below to make your own Garlic Parmesan Pumpkin Seeds:
Place 1 cup of washed pumpkin seeds on a baking sheet and let them dry for a couple hours or overnight.
Preheat the oven to 400ºF. For the seasonings you’ll need:
2 tbsp. butter melted
1 tsp. garlic powder
1 tsp. onion powder
1 tbsp grated Parmesan
Mix all the ingredients together in a mixing bowl then place back on the baking sheet.
Roast the pumpkins for 10-15 minutes. Flip seeds over halfway through roasting. Let the seeds cool for a minute and then you’re finished!
