Apricot Fruit Leather

You’ve probably seen or tasted fruit leather or fruit roll-ups from the grocery store but did you know that they’re easy to make at home? Not only is homemade fruit leather easy, it’s also really tasty.

This recipe stays in the oven for a long time so it’s a good idea to make this on a day that you’re not busy.

There’s only 3 ingredients in this recipe – apricots, sugar, and lemon juice.

Chop up the apricot and put it in a saucepan with the sugar and lemon juice. Heat the mixture until the sugar has dissolved.

 

 

Take the mixture from the saucepan and put it in a blender or food processor. Blend the mixture until it is totally smooth (no chunks).

 

 

Line a baking sheet with parchment paper and then pour the apricot mixture onto the pan. Try to even out the mixture across the pan.

 

 

Bake at 160ºF for 4-5 hours. Let the pan cool down and then cut the fruit leather into strips (I used a clean pair of scissors). Roll-up the strips and store them in an air-tight container.

 

This recipe is perfect in a lunchbox or as an after school snack!
