This recipe only has four simple ingredients, beets, olive oil, salt, and pepper.
To start, remove the stems and roots from the beets. With a good knife or mandolin, cut the beets into thin slices.
Lay the beet slices in a single layer on a baking sheet. Use just enough olive oil to lightly coat the beets. Sprinkle with a bit a salt and pepper. Bake at 375ºF for 12-15 minutes.
