1 (18 ounce) box devil’s food cake mix 1 c. canned pumpkin
1/3 cup water 2 Tbsp. oil
2 large eggs 1 large egg white
¾ cup plain yogurt
Preheat oven to 350. Line 24 muffin tins with cupcake paper liners. Combine all of the cake ingredients and mix until smooth, 1 to 2 minutes. Pour batter into muffin tins, filling them 2/3 of the way full and bake for 20 minutes or until a toothpick comes out clean. Sprinkle with powdered sugar or frost thinly with whipped frosting.
*I only use Libby’s pumpkin with chocolate cake mix. Other brands I have tried are a stronger pumpkin flavor so it tastes kind of weird. Any flavor of cake mix works with this recipe.
