Carrot Cake Pancakes

Oh my, it’s CARROT CAKE PANCAKES! What??? Can you taste the yum factor already?



2 ½ c. complete whole wheat pancake mix

1 ½ c. water

½ tsp. cinnamon

¼ tsp. ginger

¼ tsp. nutmeg

1 tsp. vanilla

3 Tbsp. butter, melted

2 medium carrots or 1 cup baby carrots, grated

Random pear (optional)

In a bowl, combine all dry ingredients. Add wet ingredients and stir until combined. It is okay if it is a little lumpy.

Turn a griddle on to medium high heat. Spray with nonstick spray. Pour batter onto to griddle and cook until brown on both sides. Top with butter sauce or syrup.

Get all ingredients together…
Wait a minute…what is that pear doing? It snuck into my picture!
I will teach that pear–blend it up and put it in my pancakes! Peel it first though.
Mix it all together
Stir until combined…
Cook on griddle
I like mine topped with butter sauce and the whipped cream that snuck into the picture too!
